Here are some ideas as to what seeds to start and what plants to get in the ground in January for a successful late winter harvest (courtesy of IFAS Extension UF):

Easily transplant: arugula, beets, broccoli, Brussels sprouts, cabbage, cauliflower, Chinese cabbage, collards, eggplant, endive, kale, kohlrabi, lettuce, peppers, sugarcane, Swiss chard, tomatillo, and tomatoes.

Transplant with care: celery, mustard, pineapple, potatoes, and spinach.

Use seeds: cantaloupes, carrots, corn, cucumbers, onions (bunching), peas (English), radish, squashes, turnips, and watermelon.
